I called them snow globe muffins to recall those glass globes filled with water that make artificial snow fall over a scene when you turn them over.
Unfortunately you cannot see the snow, but in person the muffins were really lovely for a January birthday!

First of all, it is not really glass… it is dried gelatine, and the snow… is desiccated coconut… and the penguins are sugar paste.
So you can eat the whole muffin, though it seems such a shame.
Here are the stages of making them:
First I inflated balloons and brushed them with gelatine. When the gelatine had dried, I punctured the balloons and removed them (with great difficulty).
Then I made the sugar paste decorations: little landscapes, penguins…
Here I prepared the muffins with snow on the ground.
Then I added the snowflakes.
Then I fitted the gelatine globes over the muffins.
And these are the finished muffins!
